Definition

Caramelization Divergence, CDV, describes a roasting phenomenon in which differences in energy distribution across caramelization-related reactions create distinct sensory emphases between the hot and cool stages of the cup.

Under certain roasting conditions, early-stage volatile aromatic and sweetness structures may dominate hot-cup complexity, aroma projection, and initial memory formation.

Later-stage, more stable sweetness and structural compounds may become more visible after cooling, producing a clearer and more persistent cool-cup sweetness.

As a result, two coffees with similar overall development levels may show very different hot-cup and cool-cup behavior depending on where caramelization energy was primarily allocated.

Observable Conditions

A batch may be documented as CDV when:

  • the hot cup shows strong aromatic complexity, sweet aroma projection, or early-stage memory formation
  • the cool cup presents a different sweetness structure from the hot cup
  • the transition from hot to cool is not merely a decline in intensity, but a shift in sweetness source, flavor emphasis, or structural form
  • batches with similar development levels show distinct hot-cup / cool-cup behavior due to different energy-distribution paths
  • the difference can be repeatedly observed across repeated or comparative batches

Relationship to Traditional Frameworks

Traditional roast descriptions often treat caramelization as part of overall development, judged through color, time, or flavor outcome.

Caramelization Divergence treats caramelization as a structural variable with timing and energy-distribution differences.

It does not ask only whether caramelization occurred.

It asks where caramelization-related reactions were primarily driven, and how that distribution affects the sensory division between hot and cool cup stages.
